Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

To Roast Pigeons

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pick and draw the pigeons, then truss them, keeping the feet on.

  2. Make a stuffing with the chopped liver, bread crumbs, minced parsley, pepper, salt, and butter; place this inside the pigeons.

  3. Make a slit in one leg and slip the other leg through it.

  4. Skewer the pigeons.

Roast and serve

  1. Roast them at 400°F (200°C) for 30 minutes, basting well with butter.

  2. Serve with brown gravy in a small tureen.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Form the main body of the dish, cooking through as the meat that is served.
Liver
Adds rich, savoury flavour to the stuffing as it cooks inside the birds.
Bread crumbs
Absorb juices and butter in the stuffing, giving it a moist, soft texture.
Butter
Adds richness and moisture, and promotes browning as it bastes the skin.

The step that matters

Basting the pigeons with butter. Pigeon meat is lean and can dry out in the oven. Regular basting with melted butter adds fat to the surface, keeping the skin moist and encouraging even browning.

Swap the parsley

How well each one fits the dish's main ingredients (liver, bread, pepper, butter):

  1. Sagefits about as well
  2. Parsleythe original
  3. Thymefits about as well
  4. Marjoramfits less well

Fit is the average pairing score against liver, bread, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
