To Roast Goose

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Pick, draw, and singe the goose well.

  2. Cut off the head and neck, and remove the feet and legs at the first joint.

  3. Remove the wings at the first joint and skewer the remaining portions to the sides.

  4. Stuff the goose with chopped sage, onion, bread crumbs, pepper, and salt.

  5. Tie the skin of the neck securely to prevent gravy from running out.

  6. Roast in a 400°F (200°C) oven for 2 to 2.5 hours, basting occasionally.

  7. Serve with gravy sauce and apple sauce.
