Ingredients

Directions

Brown the beef

  1. In a stew pan, melt the butter over medium heat.

  2. Add the beef and brown it on all sides.

  3. Remove the beef and place two or three skewers in the bottom of the pan.

  4. Return the beef to the pan and add enough water to half cover it.

Stew and finish

  1. Cover the pan and stew slowly for about 2 hours, adding onions if desired.

  2. Once cooked, remove the beef and thicken the gravy with butter and flour.

  3. Add the boiled carrot and turnip to the gravy, season with pepper, salt, and ketchup.

  4. Boil everything together for a few minutes and serve in a hash dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat, which becomes tender through slow stewing in liquid.
Butter
Adds richness and helps brown the beef at the start; also thickens the gravy with flour.
Flour
Thickens the gravy into a smooth, lightly body-rich sauce when cooked with butter.
Onions
Add sweetness and aroma to the gravy as they soften during stewing.

The step that matters

Browning the beef on all sides. Searing the meat in hot fat creates browned surface flavour through the Maillard reaction, which builds depth in the gravy. Pale, unbrowned meat yields a flatter-tasting stew.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, butter, meat, carrot, turnip, pepper, ketchup):

  1. Leekfits better
  2. Capsicumfits about as well
  3. Onionthe original
  4. Shallotfits about as well

Fit is the average pairing score against beef, butter, meat, carrot, turnip, pepper, ketchup. Candidates are from the same food group and used in at least 100 recipes.
