Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the stuffing and help it hold together when roasted.
Bread crumbs
Absorb moisture and give the stuffing body and structure.
Suet
Adds fat that keeps the stuffing moist and richly flavoured as it cooks.
Flour
Thickens the stewing liquor so the hash becomes a cohesive, saucy mixture.
Onion
Adds aromatic sweetness and savoury depth to the hash.

The step that matters

Roast the heart until cooked through. Stuffed meat is dense and the filling sits at its centre, so the heart must reach a safe internal temperature throughout. Size changes cooking time, so judge doneness by the thickest part rather than by minutes alone.

Swap the onion

How well each one fits the dish's main ingredients (veal, bread, parsley, pepper, egg, milk, liver):

  1. Carrotfits better
  2. Capsicumfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against veal, bread, parsley, pepper, egg, milk, liver. Candidates are from the same food group and used in at least 100 recipes.
