Beef Gravy

Ingredients

Directions

Prepare

  1. Cut the beef into slices or score it deeply.

Brown the meat

  1. In a saucepan, melt the butter and add the sliced onion.

  2. Brown the meat gently, being careful not to burn it.

  3. Cover the saucepan and let it sit by the fire for about 30 minutes to allow the gravy to run from the meat.

Simmer and finish

  1. Add the hot water and whole pepper, then let it boil slowly for 1.5 hours.

  2. If desired, add a piece of toasted bread to thicken the gravy.

  3. Season with salt and strain through a fine sieve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the meat flavor and body that the gravy is built from.
Butter
Carries flavor and helps brown the meat and onion in the pan.
Onion
Adds savory sweetness and aroma as it softens and browns in the fat.
Toasted bread
Absorbs liquid and helps thicken the gravy when added.

The step that matters

Brown the meat gently. Browning builds deep flavor through the Maillard reaction, but burnt proteins and sugars turn bitter. Keep the heat moderate and watch closely so the meat colors without scorching.

Swap the onion
