To Dress Haddocks

Ingredients

Directions

  1. Clean and wash the haddocks thoroughly.

  2. Soak them in coarse sea salt overnight for better firmness.

  3. Wash and dry the haddocks, then cut off the head, tail, and fins.

  4. Carefully skin the haddocks without tearing the flesh.

  5. Cut the flesh from the bones and divide each side into two pieces.

  6. Dust the pieces with flour, dip them in the beaten egg, and coat with bread crumbs.

  7. Heat enough dripping or lard in a frying pan to cover the fish.

  8. Test the fat's heat by dipping a slice of bread; it should turn light brown.

  9. Fry the fish, turning carefully to brown both sides.

  10. Once cooked, drain the fish on a rack for a few minutes.

  11. Serve garnished with parsley and accompanied by oyster sauce or melted butter.
