Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Remove bones from the veal chops.

  2. Lay the chops flat in a dish.

Layer and bake

  1. Sprinkle a mixture of minced parsley, flour, pepper, and coarse sea salt over each layer.

  2. Add a little gravy made from the bones.

  3. Cover the dish and bake for about 1 hour at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal chops
Form the main body of the pie, becoming tender as they cook slowly under cover.
Flour
Coats the layers and helps thicken the juices into a light gravy-like sauce.
Gravy
Adds moisture and savoury flavour so the veal stays juicy while baking.
Minced parsley
Adds fresh, green aroma and a little brightness to the layers.

Swap the parsley

How well each one fits the dish's main ingredients (veal, flour, pepper):
