Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Pick and clean the pigeons thoroughly.

  2. Cut off the heads and truss the birds by turning the wings on their backs, cutting off the feet, and drawing the skin of the belly over the legs.

  3. Place a bit of butter, pepper, and coarse sea salt inside each bird.

  4. Put a single layer of beef or veal in the bottom of the dish.

  5. Lay the trussed birds on the meat, breasts upwards, with the gizzards and livers around them.

  6. Optionally, add a few whole hard-boiled eggs.

  7. Add a little gravy or water.

  8. Cover the dish and bake for 1 hour at 350°F (175°C).
