Rhubarb Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove the leaves and skins from the rhubarb stalks.

  2. Cut the stalks into 1-inch pieces.

  3. Fill a pie dish with the rhubarb pieces and add plenty of sugar.

  4. Cover the pie and bake at 350°F (175°C) for 30 minutes.

  5. Optionally, stew the rhubarb before baking to reduce shrinkage.
