Soups and Broths

Ingredients

Directions

  1. In a large pot, combine flour, Bordeaux wine, and consommé.

  2. Add parsley, thyme, basil, marjoram, savory, bay leaf, mushrooms, onions, cayenne, cloves, mace, and pepper.

  3. Bring to a boil, then reduce heat and let simmer gently.

  4. Skim off any foam that forms on the surface.

  5. Once the meat is cooked, drain it on a baking sheet, trimming off any excess bones.

  6. Arrange the meat and bacon in a stew pan and pour the sauce over them.
