Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Thickens the soup and gives it a smooth body when rubbed through a sieve.
Eggs
Enriches the soup and thickens it gently as they set in the hot liquid.
Veal and mutton stock
Forms the liquid base and carries the flavour of the whole soup.

The step that matters

Stirring in the eggs. Eggs curdle if they meet very hot liquid too quickly. Adding them gradually, while stirring, lets them blend in and thicken the soup smoothly instead of turning grainy.
