Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides gelatin and body, giving the finished consommé a fuller mouthfeel.
Backs and trimmings of fowl
Adds chicken flavour and savoury depth to the stock.
Slices of ham
Contributes savoury, salty flavour to the stock.
Mushrooms
Adds earthy aroma and savoury umami to the stock.

The step that matters

Skim the stock as needed. Skimming removes fat and coagulated proteins that rise to the surface. Leaving them in clouds the stock and dulls the clear, clean flavour a consommé needs.

Swap the parsley

How well each one fits the dish's main ingredients (ham, veal, mushroom, onion):

  1. Garlicfits better
  2. Thymefits better
  3. Celeryfits about as well
  4. Parsleythe original
