Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Young Turkeys with Oysters Dutch Way

Ingredients

Directions

  1. Prepare the turkey and make a ragout by blanching the oysters in their own liquor.

  2. In a saucepan, combine some of the oyster liquor, yolks of eggs, butter, parsley, tarragon, lemon, salt, pepper, and nutmeg.

  3. Heat the mixture gently, being careful not to let it curdle.

  4. Once the turkey is cooked, cut the legs and wings but do not remove them completely.

  5. Slice the belly of the turkey and squeeze it between two dishes.

  6. Pour the oyster ragout over the turkey and serve hot.
