What each ingredient does

Ox-tail
Releases gelatin and meaty flavour into the liquid, giving the soup body.
Carrot
Adds sweetness and body when pureed into the soup.
Turnip
Adds mild sweetness and body when pureed into the soup.
Onion
Builds savoury depth and sweetness as it softens in the broth.
Flour
Thickens the pureed vegetables and gravy into a smooth soup.

The step that matters

Puree the vegetables through a coarse sieve. Pureeing cooked vegetables thickens the soup naturally. Pressing them through a coarse sieve removes fibrous pieces while keeping some body, so the texture stays smooth rather than gritty or watery.
