To Roast Mutton

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Prepare a brisk fire for roasting.

  3. Cover the mutton with paper where there is fat to save it for eating.

  4. Baste the mutton well in its own fat during cooking.

  5. Dredge the mutton with flour towards the end of cooking.

  6. Roast for 15 minutes per pound, adjusting time for the size of the cut.

  7. Serve with gravy, currant jelly, or onion sauce as desired.
