Fondu of Cheese

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the mixture

  1. In a bowl, mix the grated cheeses and softened butter until well combined.

  2. Add the egg yolks and the soft French roll to the mixture, and blend until smooth.

  3. Gently fold in the beaten egg whites.

  4. Season with salt and pepper.

Bake and serve

  1. Pour the mixture into small paper pans, shaped longer than square.

  2. Bake in the oven until golden brown, about 20-25 minutes.

  3. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheshire cheese and gloucester cheese
Provide the main cheese flavour and melt into a rich, savoury body.
Egg whites
Whipped air lightens the mixture and helps it puff and set in the oven.
Egg yolks
Add richness and help bind the mixture as it sets.
French roll
Soaked in cream and blended, it adds body and moisture to the mixture.
Butter
Adds fat for richness and a smooth, soft texture.

The step that matters

Folding in the egg whites. Beaten whites hold the air that makes the mixture rise. Stirring them in vigorously knocks out that air, so the fondue bakes up flat and dense instead of light.
