Why it works: Thyme and marjoram match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,225 recipes. Both carry terpineol, which smells pine, woody. The science ↓

A Rich Gravy

Ingredients

Directions

  1. Heat a small amount of oil in a pan and fry the sliced onions and flour until light brown, avoiding burning.

  2. Transfer the browned mixture to a stewpan and pour boiling water over it.

  3. Add the sliced beef and bring to a boil.

  4. Add the herbs and spices, including parsley, thyme, savory, marjoram, tarragon, mace, allspice, cloves, and ham or bacon.

  5. Simmer until the meat juices are extracted, skimming off any fat that rises to the surface.

  6. If using for hare or fish, add anchovy for extra flavor.
