Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Take well-aged beef steaks and beat them gently with a circular steak beater.

  2. Season the steaks with pepper, coarse sea salt, and minced shallot.

  3. Roll each slice with a piece of fat and fill your pie dish.

Assemble and bake

  1. Add some crust around the edge and an inch below it, then pour in the water or broth.

  2. Cover with a thick crust and bake in a moderate oven at 350°F (175°C).

What each ingredient does

Beef steaks
Provide the main meat, which becomes tender and flavorful as it cooks in the pie.
Fat
Adds richness and moisture to the rolled beef as it melts during baking.
Water or broth
Creates liquid in the pie that gently cooks the beef and forms a sauce.
Pie crust
Encloses the filling and provides a sturdy, golden top and edge when baked.

The step that matters

Covering the pie with crust. The crust must seal the edge well so steam and juices stay inside, keeping the beef moist instead of drying out in the oven.

Swap the shallot

How well each one fits the dish's main ingredients (beef, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Carrotfits better
  4. Shallotthe original

Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
