Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Truffles
Add a deep, earthy aroma that perfumes the broth and gravy.
Fowl
Provides the meat that becomes tender through long, gentle simmering.
Bacon
Adds fat and savoury flavour as it rests under the bird while cooking.
Strong gravy
Gives the finished sauce body, savouriness and a rich brown colour.

The step that matters

Simmer slowly. Gentle heat keeps the liquid just below a boil, so the connective tissue softens into tender meat without the fowl toughening or the broth turning cloudy.

Swap the mace

How well each one fits the dish's main ingredients (truffle, carrot, pepper, lemon, clove, onion):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against truffle, carrot, pepper, lemon, clove, onion. Candidates are from the same food group and used in at least 100 recipes.
