Carmel Sugar
Ingredients
Directions
Boil the sugar longer than in previous operations.
Dip a stick into the sugar, then into cold water.
If the sugar snaps like glass when it touches the water, it has reached the carmel height.
Ensure the fire is not too fierce to prevent burning the sugar.
Recipe from a historical cookbook (Internet Archive).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
