Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Cure the beef

  1. Rub the brown sugar and saltpetre into the beef and let it sit for 24 hours.

  2. Wash the beef and dry it with a cloth.

  3. Season with pepper, salt, and mace, then cut into 5 or 6 pieces.

Bake and pot

  1. Place the beef in an earthen pot and add lumps of butter on top.

  2. Bake in a hot oven (400°F / 200°C) for 3 hours.

  3. Remove from the oven, cut off the hard outsides, and beat the beef fine in a mortar.

  4. Add more pepper, salt, and mace as needed.

  5. Melt a pound of butter in the gravy and fat from the beef, adding as necessary.

  6. Pack the mixture into pots, press down firmly, and pour clarified butter over the top.

  7. Store in a dry place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Forms the bulk of the dish, becoming a dense, spreadable meat once beaten fine.
Brown sugar
Adds sweetness and helps balance the saltpetre during the curing rub.
Saltpetre
Cures the meat, helping it hold a pink colour and keep its flavour during storage.
Butter
Adds richness and moisture, and seals the pots as a fat layer for keeping.

The step that matters

Beat the beef fine after baking. Cutting away the hard outsides and beating the meat while still warm breaks it into a smooth, even texture. Leaving tough or dry pieces in makes the final mixture grainy and unevenly seasoned.

Swap the mace

How well each one fits the dish's main ingredients (beef, sugar, pepper, butter):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against beef, sugar, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
