Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat that is pounded into a paste and thickened into the panada.
Water
Cooks the chicken and, as boiling water, loosens the pounded meat into a smooth paste.
Lemon peel
Adds a bright citrus aroma that lightly flavours the chicken.

The step that matters

Boil gently until the desired consistency. Boiling too hard can toughen the proteins and make the mixture grainy or tight, while gentle heat lets it thicken smoothly. Stop when it is thick but still pourable.

Swap the nutmeg

How well each one fits the dish's main ingredients (chicken, lemon):

  1. Thymefits better
  2. Marjoramfits better
  3. Rosemaryfits better
  4. Nutmegthe original

Fit is the average pairing score against chicken, lemon. Candidates are from the same food group and used in at least 100 recipes.
