Why it works: Clove and ginger match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,038 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Cucumbers, a Beautiful Preserve

Ingredients

Directions

Prepare the cucumbers

  1. Soak cucumbers in a weak saltwater pickle for 2 days, changing the water twice.

  2. Green the cucumbers as directed for pickles and sprinkle with a bit of alum.

  3. Scald and cool the cucumbers until they are a fine green.

  4. Boil the cucumbers for a few minutes in water with fresh leaves above and below.

  5. Cool the cucumbers, then cut a piece from the flat side and scrape out the seeds and pulp.

  6. Dry the cucumbers gently with a cloth.

Stuff and tie

  1. Stuff the inside of each cucumber with bruised cloves, sliced ginger, lemon rind, mace, and white peppercorns.

  2. Tie the cut piece back on with narrow tape.

Make the syrup and preserve

  1. For each pound of cucumbers, prepare a pound of clarified sugar and pour it over the cucumbers when cold.

  2. Press down with a plate and a weight to keep the cucumbers submerged.

  3. After 2 days, boil the syrup, adding half again as much clarified sugar.

  4. Repeat the soaking and boiling of the syrup three times over two weeks.

  5. Finally, add the juice and zest of 2 lemons for every 6 cucumbers and boil for 10 minutes before potting.

What each ingredient does

Cucumbers
Form the bulk of the preserve, taking up the sugar syrup and carrying the spiced filling.
Sugar
Sweetens the preserve and, as a thick syrup, draws water out and preserves the cucumbers.
Alum
Helps the cucumbers stay firm and crisp through soaking and boiling.
Lemon juice
Adds acidity that brightens the sweet syrup and supports preservation.

The step that matters

Repeating the syrup boil over two weeks. Sugar draws water out of the cucumbers and replaces it, so the syrup must be reboiled and built up gradually. Boiling it once with too little sugar lets the cucumbers soften and ferment rather than preserve.

Swap the mace

How well each one fits the dish's main ingredients (cucumber, clove, ginger, lemon, sugar):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against cucumber, clove, ginger, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
