Ingredients

Directions

  1. Make a boiled pastry and roll it thin and high, about the size of a small dredging box.

  2. Cut the veal into thin pieces and season with pepper, coarse sea salt, nutmeg, and a little butter.

  3. Bake the patties and serve with good gravy.

  4. If using oval tins, bake a little light pastry with some bread inside.

  5. Prepare a filling with fowl, ham, hard-boiled egg yolk, anchovy, pepper, salt, and lemon peel.

  6. Cut the meat small and heat it with a little gravy.

  7. Remove the bread from the patties, fill them with the meat, and replace the lids.

  8. Serve the patties warm.
