What each ingredient does

Calf's feet stock
Gelatin from the calf's feet provides the firm, sliceable set of the flummery.
Egg whites
Egg whites add structure and lightness to the set dessert.
Sweet almonds
Ground almonds give the dessert its flavour and creamy body.
New milk
Milk adds richness and softness, balancing the firm gel.
Thick cream
Cream adds fat, richness and a creamy whiteness to the mixture.

The step that matters

Stir the mixture until nearly cold before adding cream and pouring into molds. If the mixture is still very warm, the cream can separate or the gelatin will not set evenly. Cooling it first keeps the mixture smooth and lets it firm uniformly in the molds.
