Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Provides the main body; its proteins firm and turn flaky as they cook.
Butter
Adds richness and moisture, and keeps the slices from sticking to the paper.
Anchovy sauce
Adds a salty, savoury note that sharpens the mild flavour of the fish.

The step that matters

Remove the salmon from the water immediately. Fish keeps cooking from its own residual heat, so leaving it in the hot water past doneness makes the flesh dry and firm.
