Baked Carp

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the carp

  1. Clean the carp and stuff it as you would for soles.

  2. Sew it up and brush with egg yolk.

  3. Cover with bread crumbs and baste with oiled butter.

  4. Place the carp in a deep baking dish.

Bake

  1. Add stock, sliced onions, bay leaves, herbs, port wine, and anchovies.

  2. Cover the dish and bake at 350°F (175°C) for 1 hour.

  3. Remove the fish and keep it warm.

Make the gravy and serve

  1. Strain the cooking liquid and heat it with butter rolled in flour, mustard, cayenne, and soy sauce.

  2. Serve the fish garnished with lemon, parsley, and horseradish.

  3. Pour the gravy into a sauceboat.

What each ingredient does

Carp
Is the main body of the dish, cooked whole so the flesh stays moist under cover.
Egg yolk
Brushed on the fish to help the bread crumbs adhere to the surface.
Bread crumbs
Form a coating over the fish that helps it brown during baking.
Port wine
Adds sweetness and depth to the cooking liquid that becomes the gravy.
Anchovies
Add a salty, savoury depth to the cooking liquid and gravy.
Butter
Adds richness and, rolled in flour, thickens the strained cooking liquid into gravy.

The step that matters

Covering the dish while baking. The lid traps steam so the fish cooks gently in the liquid and stays moist. Without it, the surface dries and the flesh toughens before the centre is cooked.

Swap the onion

How well each one fits the dish's main ingredients (egg, bread, butter, fish, basil, thyme, parsley):

  1. Shallotfits better
  2. Leekfits better
  3. Chivefits better
  4. Onionthe original
