What each ingredient does

Young hen turkey
Forms the main body of the dish, cooked through by roasting.
Sausage meat
Adds richness and savoury flavour to the stuffing; optional.

The step that matters

Be careful not to tear the liver or let the gall touch it. The gall bladder can leave a bitter taste if its fluid touches the meat, so the bird must be drawn without rupturing it.
