Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main body and savoury flavour of the ketchup as they release their liquid.
Coarse sea salt
Draws liquid out of the mushrooms and helps preserve the ketchup.
Shallots
Add a mild sharpness and savoury depth to the liquid.
Garlic
Adds pungent aroma and savoury depth to the liquid.
Horseradish
Adds a sharp, pungent aroma that supports the long-term preserving reboil.

The step that matters

Boil and skim the mixture well. Boiling kills spoilage microbes and skimming removes the foam and solids that would otherwise sour or spoil the liquid during storage.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, shallot, clove, garlic, pepper, ginger, horseradish):

  1. Turmericfits better
  2. Thymefits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against mushroom, shallot, clove, garlic, pepper, ginger, horseradish. Candidates are from the same food group and used in at least 100 recipes.
