To Roast Beef

Ingredients

Directions

  1. Place the beef on a spit a little distance from the fire to allow heat to penetrate.

  2. Move the beef closer to the fire as it cooks, basting it continuously.

  3. When nearly done, indicated by smoke drawing to the fire, dredge the beef with flour for color.

  4. Garnish with horseradish and serve hot with gravy in the dish.
