What each ingredient does

Carrots
Form the body and sweet flavour of the soup once stewed and sieved.
Butter
Carries the frying of the vegetables and ham, adding richness and browning gently.
Flour
Thickens the stock so the sieved soup becomes smooth and velvety.
Stock
Provides the main liquid and savoury depth of the soup.
Onion
Adds savoury, aromatic depth when fried in butter.

The step that matters

Mixing in the flour smoothly. Flour clumps if added to hot liquid without being blended first, leaving lumps that a sieve may not fully remove. Mixing it smoothly into the stewed vegetables before adding stock lets it thicken evenly.
