What each ingredient does

Truffles
Serve as the main ingredient, giving the dish its distinctive earthy aroma.
Olive oil
Conducts heat and carries flavour, helping the truffles cook evenly in the dish.
Shallots
Add a mild sharpness that builds aromatic depth during cooking.
Lemon juice
Adds acidity that brightens the rich, earthy flavour of the truffles.

The step that matters

Cover the dish and cook until one side is well done, then turn the truffles. Truffles are delicate and cook quickly; too little heat leaves them underdone, while overcooking dries them and dulls their aroma. Turning once lets both sides cook evenly.
