Cook the vegetables

  1. In a stewpan, combine sliced carrots, butter, and quartered onions. Cook until the vegetables are soft.

  2. Add stock and sugar, then stew gently for 3 hours.

Finish the puree

  1. Pass the mixture through a tamis.

  2. If the puree is too thin, reduce it on the fire.

  3. Stir in velouté, skim clear, and thicken to coat the entree.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Form the main body of the puree and provide its sweet, earthy flavour.
Butter
Adds richness and fat, giving the puree a smoother mouthfeel.
Onions
Add savoury depth and aroma as they soften during stewing.
Velouté
Thickens the puree so it coats the entrée.

The step that matters

Stew gently for 3 hours. Gentle, long cooking softens the vegetables fully so the puree passes smoothly through a tamis. Vigorous boiling can scorch the butter and sugar and break the texture.
