What each ingredient does

Artichokes
Form the main body of the dish, holding the stuffing while they stew.
Forcemeat
Provides a rich, savoury filling that stays moist during slow stewing.
Mushrooms
Add moisture and earthy flavour to the filling.
Stock
Moistens the dish so it stews gently without drying out.
Lemon juice
Adds acidity that brightens the oil and herb sauce.

The step that matters

Add a little stock to moisten and let them stew slowly. Gentle, slow stewing with a small amount of liquid lets the artichokes and filling cook through and become tender. Too much heat or too little liquid can dry out the filling or toughen the artichokes.

Swap the lemon
