What each ingredient does

Fowl or capon
Provides the main meat, which becomes tender through slow stewing in liquid.
Rice
Absorbs the flavoured cooking liquid and forms the bed the meat is served on.
Flour
Thickens the cooking liquid into a sauce that coats the fowl and rice.
Bacon
Adds fat and savoury flavour that seasons the stewing liquid.

The step that matters

Stewing until cooked through. Slow, gentle simmering keeps the meat tender and moist; a hard boil toughens muscle fibres and can leave the bird dry at the bone.

Swap the mace

How well each one fits the dish's main ingredients (pepper, thyme, clove, onion, carrot, rice, flour):

  1. Marjoramfits better
  2. Parsleyfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against pepper, thyme, clove, onion, carrot, rice, flour. Candidates are from the same food group and used in at least 100 recipes.
