What each ingredient does

Turbot
Forms the main body of the dish, becoming tender and flaky as it warms through in the sauce.
Flour
Thickens the sauce together with the butter so it coats the fish.
Butter
Enriches the sauce and adds richness and smooth texture when mixed with flour.
White wine
Adds acidity and aroma as it stews with the truffles and shallots.
Truffles
Contribute a strong earthy aroma to the stewed sauce.

The step that matters

Thickening the sauce with flour and butter. Flour must be cooked smoothly into the butter and liquid so it thickens without lumps; undercooked flour leaves a raw taste and the sauce stays thin or grainy.

Swap the allspice

How well each one fits the dish's main ingredients (turbot, truffle, shallot, carrot, white wine, mushroom, pepper):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Allspicethe original
