What each ingredient does

Green gooseberries
Provide the fruit and natural pectin that help the jam set.
Granulated sugar
Sweetens the jam and, as it cooks down, helps it set and keep.

The step that matters

Cooking until the jam thickens. The jam sets as pectin and sugar concentrate while water evaporates. Stopping too early leaves it runny, while cooking too long can make it stiff and sticky.
