Ingredients

Directions

  1. In a deep stewpan, combine the meat, onion, carrot, and bouillon.

  2. Set over a brisk fire until the broth reduces and forms a glaze at the bottom.

  3. Add enough water to finish the soup.

  4. For a richer soup, cut beef from the bones, dredge with flour, season with salt and pepper, and fry until brown.

  5. Stew the beef for six hours with 1 pint of water per pound of meat and additional vegetables, excluding onions.

  6. Add four fried onions for every three quarts of soup.

  7. Strain the soup to remove fat, then thicken with 6 ounces of butter mixed smoothly with 5 ounces of flour.

  8. After 20 minutes, stir in soy sauce, sherry, and a pinch of cayenne before serving.
