Cheap, Clear Gravy Soup

Ingredients

Directions

Prepare the beef

  1. Ask the butcher to cut 5-6 pounds of shin or leg of beef into even pieces.

  2. Place the beef in a large pot and add 3 quarts of cold water.

  3. Bring the water to a boil slowly, skimming off any foam.

Simmer the broth

  1. Add 1½ ounces of coarse sea salt, ½ teaspoon of black peppercorns, 8 cloves, 2 blades of mace, a bunch of savory herbs, 2 chopped carrots, and 1 chopped heart of celery.

  2. Optionally, add 1 mild onion.

  3. Simmer the mixture gently for 4 hours.

  4. Check the beef for tenderness; if tender, remove it from the pot.

  5. Continue to simmer the soup for an additional 2-3 hours.

Strain and finish

  1. Strain the soup through a fine sieve into a clean pot.

  2. Once cooled, remove any fat from the surface.

  3. Heat 2 quarts of the strained soup, and when boiling, stir in ½ ounce of sugar, 1 tablespoon of soy sauce, and 2 tablespoons of mushroom ketchup or Harvey's sauce.

What each ingredient does

Beef shin or leg
Collagen breaks down during long simmering, giving the broth body and rich flavour.
Cold water
Slow heating from cold water draws out meat flavour and gelatin into a clear liquid.
Coarse sea salt
Seasons the broth throughout and enhances the savoury flavour of the beef.
Soy sauce
Adds savoury depth and umami to the finished broth.
Mushroom ketchup or harvey's sauce
Adds concentrated savoury, umami flavour to the finished broth.

The step that matters

Bring the water to a boil slowly, skimming off any foam.. Heating gently and removing the foam that rises keeps the broth clear and free of cloudy particles and off-flavours.

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, clove, mace, carrot, celery, sugar, sauce):

  1. Capsicumfits better
