What each ingredient does

Rice
Swells as it cooks, thickening the soup and giving it body.
Butter
Adds richness and a smooth mouthfeel to the finished soup.
Flour
Mixed with butter, it helps thicken the soup and smooth its texture.
Egg yolks
Enrich the soup and thicken it gently when heated.
Carrots
Add natural sweetness and body to the broth.
Onions
Build savory depth and sweetness in the broth.

The step that matters

Heating the soup slowly after adding the egg yolks. Egg yolks thicken by gentle heat but can scramble and curdle if the soup boils, so keep it warm rather than boiling once they are added.
