Baked Soles

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Wipe the cleaned soles dry and let them rest for at least 1 hour, wrapped in a clean cloth.

  2. Mix the melted butter with the beaten egg.

Coat and bake

  1. Brush the soles with the butter and egg mixture.

  2. Cover the fish with the seasoned bread crumbs.

  3. Pour 1 to 2 teaspoons of melted butter into a flat dish and place the fish in it.

  4. Sprinkle a little more melted butter on top and press the bread crumbs lightly onto the fish.

  5. Bake in a preheated oven at 350°F (175°C) for about 20 minutes.

  6. Carefully transfer the baked soles to a serving dish before serving.

What each ingredient does

Soles
Forms the main flesh of the dish, cooking to tender, flaky texture in the oven.
Dry bread crumbs
Form a crisp, golden coating that helps shield the delicate fish from drying out.
Butter
Adds richness and moisture, and helps the coating brown in the oven.
Egg
Binds the butter to the bread crumbs so the coating adheres to the fish.

The step that matters

Pressing the bread crumbs onto the fish. Light pressure helps the crumb coating stick to the fish surface. Loose crumbs can fall off during baking, leaving exposed fish that dries out and cooks unevenly.
