Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and carries flavour, and helps the fish brown lightly in the pan.
Flour
Thickens the stock into a gravy that clings to the fish.
Trout
The main protein, which firms and flakes as it gently stews.
Veal stock
Forms the liquid that cooks the fish and becomes the body of the gravy.

The step that matters

Stewing the fish gently. Gentle heat cooks the trout through while keeping its flesh moist and tender. A hard boil would toughen the flesh and break the fish apart.
