Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender, briny body of the sausages.
Bread crumbs
Absorb moisture and bind the mixture so it holds its shape.
Beef suet
Adds fat that keeps the sausages moist and rich while frying.
Eggs
Bind the mixture together and help it set when cooked.

The step that matters

Do not chop the oysters finely. Leaving the oysters in coarse pieces keeps some texture in the sausages; over-processing turns them pasty and can release excess liquid that makes the mixture hard to shape.

Swap the mace

How well each one fits the dish's main ingredients (oyster, bread, beef, pepper, nutmeg, egg):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against oyster, bread, beef, pepper, nutmeg, egg. Candidates are from the same food group and used in at least 100 recipes.
