Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young asparagus
Provides the main vegetable body and flavour of the sauce.
Thickened veal gravy
Adds body and savoury depth to the sauce.
Egg yolks
Enrich the sauce and help it thicken and hold together when gently heated.
Melted butter
Adds richness and a smooth, glossy texture as an alternative base.

The step that matters

Draining the asparagus thoroughly. Excess water dilutes the gravy and butter, making the sauce thin and watery, so the asparagus should be well drained before mixing.

Swap the white pepper

How well each one fits the dish's main ingredients (asparagus, veal, egg, butter, lemon):

  1. Tarragonfits better
