What each ingredient does

Walnuts
Provide the main flavour base and, as they steep in vinegar, darken the liquid.
Vinegar
Acts as the main preservative and sharp acid that extracts flavour from the walnuts.
Anchovies
Add savoury depth, dissolving into the liquid to give a salty, umami background.
Garlic
Adds pungent aroma and sharpness that mellows during boiling.
Beer
Adds malty body and further flavour to the liquid.

The step that matters

Letting the walnuts turn black in the vinegar. The walnuts need time to steep and darken fully; rushing this stage leaves the flavour and colour underdeveloped. Stirring spreads the vinegar evenly so the nuts soak through.

Swap the mace

How well each one fits the dish's main ingredients (walnut, vinegar, beer, garlic, nutmeg, clove, pepper):

  1. Allspicefits better
  2. Cinnamonfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against walnut, vinegar, beer, garlic, nutmeg, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
