What each ingredient does

Bread crumbs
Provide the bulk and structure that hold the suet and herbs together.
Beef kidney suet
Adds fat that keeps the forcemeat moist and rich while frying.
Egg yolks
Bind the mixture and help it set firm and smooth when cooked.
Milk
Loosens the mixture so the crumbs and yolks blend into a smooth paste.

The step that matters

Pound until perfectly smooth. Thorough pounding breaks the suet and crumbs into a uniform paste. Lumps of fat can melt unevenly during frying, leaving greasy spots and a crumbly texture.
