Beef or Mutton Cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the chopped beef or mutton with the chopped suet.

  3. Season the mixture with salt, cloves, mace, and cayenne pepper.

Assemble

  1. Line a round baking dish with thin slices of bacon.

  2. Press the meat mixture into the dish and smooth the top.

  3. Cover the meat with more bacon and place a plate with a weight on top.

Bake and serve

  1. Bake for 2 hours and 15 minutes.

  2. Remove the bacon and serve hot with rich brown gravy, or let it cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef or mutton
Provides the main body and protein structure of the loaf as it cooks.
Beef suet
Adds fat that keeps the loaf moist and rich during the long bake.
Fat bacon
Lays over the meat, adding fat that bastes the loaf and flavours its surface.

The step that matters

Pressing the weight on top. The weight presses the meat down so the loaf stays dense and holds its shape while baking, instead of crumbling or cooking unevenly.

Swap the mace

How well each one fits the dish's main ingredients (beef, clove, pepper):

  1. Allspicefits better
  2. Marjoramfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against beef, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
