Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Blanquette of Veal

Ingredients

Directions

  1. Slice the mushroom buttons and sauté them in butter over medium heat for 12 to 15 minutes without browning.

  2. Remove the mushrooms and place them on the veal.

  3. Pour boiling sauce tournee over the veal and mushrooms.

  4. Heat the blanquette sauce slowly, stirring occasionally.

  5. Mix 1 or 2 spoonfuls of the sauce with the beaten egg yolks and stir back into the sauce.

  6. Add the strained lemon juice and shake the saucepan over the heat until the sauce is just set.

  7. Serve the blanquette immediately.
