Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Minced veal
Forms the main body of the dish, giving it a tender, meaty texture.
White sauce
Provides moisture and a creamy, smooth binding for the minced meat.
Oysters
Add a briny, savoury flavour and a soft texture when added at the end.

The step that matters

Heat the veal in the white sauce without boiling. Boiling a cream-based sauce can cause it to separate and turn grainy, and overcooking the minced meat makes it tough and dry.

Swap the mace

How well each one fits the dish's main ingredients (veal, sauce, oyster, pepper, bread, mushroom, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against veal, sauce, oyster, pepper, bread, mushroom, butter. Candidates are from the same food group and used in at least 100 recipes.
