To Roast Pork

Ingredients

Directions

  1. Score the skin of the pork in narrow strips before roasting.

  2. Place the pork at a distance from the heat initially to heat through without hardening the skin.

  3. Baste the pork constantly while roasting.

  4. For stuffing, loosen the skin from the knuckle and insert the stuffing as much as possible.

  5. Brush the skin with clarified butter or salad oil if the meat is not very fatty.

  6. Roast the leg of pork for 3 hours, loin for 2 to 2.5 hours, and spare rib for 1 hour.

What each ingredient does

Leg of pork
Main cut of meat that becomes tender and juicy as its fat and connective tissue render.
Loin of pork
Lean main cut that cooks to a firm, juicy texture when roasted gently.
Spare rib of pork
Fatty main cut whose fat renders during roasting, keeping the meat moist.
Clarified butter or salad oil
Fat that helps the skin brown and crisp in the oven.

The step that matters

Place the pork at a distance from the heat initially. Starting far from the heat lets the meat warm through gradually. If the skin faces intense heat first, it hardens and dries before the interior is heated, which leaves the skin tough.

Swap the apple

How well each one fits the dish's main ingredients (pork, butter):

  1. Applethe original
  2. Coconutfits about as well
  3. Avocadofits less well
  4. Peachfits less well

Fit is the average pairing score against pork, butter. Candidates are from the same food group and used in at least 100 recipes.
